Should I enable something in AOSP or make sure it's enabled while building the ROM?
Or it's enough just to add the code to the AOSP tree?
ChatGPT suggests I enable EuiccService :)
Should I do that?
Any other suggestions?

There is no need for you to show that you have done some research beforehand by asking "ChatGPT". That will only make it less likely for you to get real help.
No, there is nothing really you need to change other than to include OpenEUICC and the dependency repo in the latest AOSP source tree. You might need to add OpenEUICC to PRODUCT_PACKAGES but that's all.
